Healthy Coconut Chicken Meatballs

Want to spice up your chicken meatballs? Like coconut shrimp but you don’t have any shrimp?

Whatever your reason for trying this recipe, you’ll enjoy this coconut chicken meatball recipe. It’s simple and delicious and all you need is 7 ingredients plus a dipping sauce. We have recommendations below, but you could also make your own sweet and spicy dipping sauce with chili sauce and preserves.

Coconut Chicken Meatball Recipe

1 lb of organic, hormone free range ground chicken

¾ cup shredded coconut

1 egg

½ tsp paprika

½ tsp black pepper

½ tsp garlic powder

1 tsp sea salt

Directions

Preheat the oven to 350 degrees.

Mix all ingredients together and shape into 12 small meatballs.

Spread out on a baking sheet and bake for 20-30 minutes.

The meatballs should have a little browning on top or the meatballs should have an internal temperature of 165 degrees.
